Blueberry Buckle

A southern favorite that you will love.


¼ cup butter, softened

¾ cup white sugar

1 egg

2 cups white flour

½ tsp. salt

½ cup milk

2 cups blueberries, fresh or frozen


Cream butter and sugar. Add egg and beat well. Sift together flour, baking powder, and salt. Add dry ingredients to creamed mixture alternating with milk. Beat until smooth. Fold in berries. Spread batter in a greased 9x9-inch pan. Bake at 350F for 40-45 minutes or until a toothpick comes out clean. Cool for 10 minutes. Remove a wire rack.



½ cup confectioners’ sugar
2 tsp. butter, softened
½ tsp. grated orange or lemon peel
1½ Tbsp. milk


Combine glaze ingredients, gradually adding the milk; drizzle over the top of the warm coffee cake.
